The way the recipe is written is a gentle curry flavour that enhances but does not over power what you are eating it with.
Ingredients
Spiced Paste
½ inch Piece of Ginger
¼ tsp Turmeric
2 cloves of Garlic
1 tsp Cumin seeds
2 tbsp ground Coriander
3 tbsp Tamarind
Juice of half a lime
Blend all ingredients in a food processor
Remainder of ingredients:
1 Onion finely chopped
1 Tomato finely chopped
1 can of Coconut Milk
Prep & Directions
1. Over med/high heat sauté onion until very soft and translucent 3-5 minutes. 2. Add tomato and cook for 5 minutes, add coconut milk and spice paste and bring to a gentle boil for 5-7 minutes
