Mexican Caviar

A simple dish full of personality that can be used as a dip or a salad.

Ingredients

Mix together the following and bring to a boil, stir until sugar dissolves.

½ cup olive oil – regular or extra virgin

½ cup sugar

¾ cup apple cider vinegar

1 tablespoon water

Salt and pepper

Cool mixture 20-25 minutes, and then add to vegetables.

In a large bowl mix together the following:

1 cup chopped green onion

1 cup chopped green pepper

1 cup chopped celery

Drain and rinse and add to the above mixture in bowl:

1 large can of black beans

½ cup Pillers Simply free ham finely diced

1 large can of lentils

1 small can of niblets corn

1 jar of chopped pimento or ½ cup chopped roasted red peppers

Prep & Directions

1. Once the juice has cooled down mix into the bowl of vegetables.

2. You will notice that there will be excess juice you may or may not want to drain off – optional.

3. You can store in jars and keep in refrigerator for 1 week.
