Ingredients
1 Tbsp. Melia extra virgin olive oil
1 leak using only the white and light green parts (cut the leak in half, length wise then slice cross wise about ½ inch thick)
2 celery stocks, sliced crosswise ½ inch thick
1-1/2 cups of diced raw Nutrafarms boneless chicken thighs
6 cups low sodium chicken stock
½ cup orzo
Juice of 2 lemons
Fresh dill for Garnish
Prep & Directions
1. Heat oil in a large stock pot over med/high heat. Add leak and celery and cook stirring occasionally for 3-5 minutes. Add Chicken and continue to cook for 5-7 minutes.
2. Add Chicken Stock and Lemon juice and bring to a boil, Cover and reduce heat to medium and add orzo. Continue to cook for 20 minutes until orzo is cooked
3. Remove pot from the heat and serve, garnish soup with fresh Dill
